I’ll cosign and say that I also recommend Anthony’s, I use their gigantic pouch-o-vital wheat gluten for my protein mug cakes and the quality is great. I’d love to see if you develop a chewy, Greek style pita a la low-carb and high protein. I’ve used the recipe from Aki’s Kitchen “Pita for Souvlaki” for years and it is amazing. I got it to half whole wheat and use soy milk instead of milk, of course, and always make a triple batch cause they freeze beautifully. I wonder if a few swaps would be easy here? It would be great to have a reliable recipe so I don’t get tempted to be lazy and buy the Joseph’s brand oat and flax ones – who needs to spend extra money and incur more plastic packaging?   4. Just pulled these out of the oven. They were easy to make, and did rise (though I let rise longer), and browned quite nicely. I used convection oven on 400, 17 minutes.
    I have been baking sourdough for over 30 years, and giving up bread was a very hard thing. It’s a real joy to bake bread again! Thank you!!

  7. This is the wrong mindset. Substituting everything with something “Keto”. Gluten is bad for gut and overall health. Keto is an anti inflammatory diet for a start, done with Keto breads, cookies, pasta and cakes it is not the “elimination diet” it should be.

  9. I’ve been keto for years, low carb and low net carbs aren’t the samething. You’ll get a glucose response from it for sure but super cool and a great way to splurge once in awhile
