Will need to try this with all allulose. Can’t cope with the cooling effect or the intestinal disturbance of swerve. The last full sugar pie I made was in the early 2000s, based on a maple nut pie with a spiced pastry crust recipe that I was given by a food editor at Better Homes and Gardens. I don’t know if they ever published that crust, but it was fantastic. I made the pie with black walnuts and hickory nuts that I gathered and sorgum syrup from some Amish neighbors. Dad loved it because it was much like what his grandmother would make when he was small, using what they grew and gathered locally. When I was little, bushels of black walnuts would get spread on the driveway to dry and the be driven over by the car to remove the hulls.
right? I was thinking the very same thing. I love this recipe and it is a staple here…not only at the holidays, but year round.
Ironically Carolyn said the same thing about allulose in her interview with Steve from Serious Keto. She said she wasn’t sure if it was the brand, or what, but she personally suffered gastrointestinal distress from the allulose but not the Swerve. Looks beautiful~ I love working w/bocha sweet & allulose, often together. I also like to toast my nuts a bit prior to adding to any recipe~ just amps it up a notch. Pecans are my all-time favorite nut..ever, oh heck yes please for pecan pie!

Wow, beautiful! Thank you Carolyn for sharing, my favorite holiday pie. Actually I can eat it year round. I am so happy there is a Keto version of my pie. I have yet to make the perfect pecan pie since I went Keto. It doesn’t taste like the real thing, but nevertheless I eat it anyway. i plan to make it this weekend I hope I get it right to taste like the real mcccoy, so I can bring it to a getogether Thanksgiving pot luck and see if people will like it and think it’s the real thing and surprise them by telling them it’s Keto.
This looks fantastic, and this Thanksgiving will be my first Thanksgiving eating Keto, so I think this would be great, I was thinking a very little bit of Xantum Gum might help stiffen up the sauce for when it cools too.

I make my keto pecan pie with the caramel and maple syrups from choc zero and it’s the most amazing, gooey center you can imagine.
I’ve never needed to, with this crust…. what brand of almond flour are you using?
@All Day I Dream About Food Typically Blue Diamond or Anthony’s, though sometimes a generic, organic almond flour from my local coo-op. They all react the same, even w/lessening amount used a bit. After researching further today, I’m now wondering if the extremely arid climate I live in may affect the moisture content of the flour. I’m going to try storing it double wrapped in the freezer, see if that helps.

@RV thereyet?(Dan & Sammy asking=) You might be onto something.. also, what is your pie pan made of? I think you could add more butter, rather than egg white. I find that egg white makes the crust tough, less tender.
You won’t need it. Once it cools completely, it will be perfect. Xanthan gum might make it overly thick.

Pecan pie is my favorite too. When I first went keto a few years back I didn’t know which recipes were good (i.e. yours) so I just searched for pecan pie keto. Before the holidays I found Wes on H.F.L.C. doing a pecan pie taste test and his choice was yours. It was the same recipe I was already planning on making. It was excellent and I knew your recipes were the ones to use. I now have several cookbooks and love everything. Love your pecan pie dance, a dessert that good makes me dance too 🙂
