This is about half the carbs as regular hummus and has a better nutritional profile. You usually have to be pretty careful about your consumption of hummus if you’re eating a typical one made with chickpeas.
I see youβve been fooled by the nutrition label. Hummus is labeled for 1 tablespoon servings, that makes it look keto friendly when itβs not.
@ladyflimflam It can still fit into keto but you just have to be very mindful of the amount that you’re using. With this recipe, you can use the hummus a lot more liberally, which I find a lot more satisfying than having to worry about how fast a chickpea hummus would add up in carbs.
Wonder how the flavor would be like since you’re leaving out garbanzo bean. I love garbanzo beans.
@ladyflimflam I haven’t been fooled to be honest. Regarless of the carb, it doesn’t spike your insulin due to the slow-releasing carbs so you can stay in keto after consuming a lot. you can have a lower carb count but if it spikes your insulin and kicks you out or a normal carb count that’s slow releasing. so the science speaks volume.
“Keto friendly” is how people new to the diet speak of it .. i would say “insulin spike friendly” is a better option
@RuledMe Today’s my 24-hour (dirty) fasting day, so probably won’t make it til this weekend, but I will let you know!
It’s definitely got a different taste but it’s got a similar texture and when you use it as a dip or spread, it’s quite similar. The roasted notes in the cauliflower bring a lot of added flavor, so I definitely recommend not skipping that step π
@Tony Dondada Chickpeas do have a glycemic index of 28 (while cauliflower is around 12), so it would normally spike insulin quite a bit higher than cauliflower would for most people. I personally wouldn’t recommend consuming a lot of chickpea-based hummus on keto as it does add up in carbs quickly, but if it works fine for you that’s great!
@Jody Bogdanovich I hope it goes well! I’ll definitely be looking forward to hearing your feedback π
Very interesting ideaππππ

Sure thing – I hope you get a chance to try it out!
Keep the carb count even lower by eating it with homemade carnivore crisps or jerky. Make it a meal rather than a snack. It looks delicious.
