This video began with the concept of trying out a TikTok keto dish for cheddar pickle chips and wound up with me producing the most effective keto breading I've ever before had. The impressive thing is that this breading has only TWO ingredients and just 2g of complete carbohydrates per 3/4 cups (90g). The magic occurs by incorporating these two components into a food mill. When air fried, it develops into something that feels and look like it's been batter fried rather than breaded.
I will not make a dish for this since it's just so basic.
In a food processor, integrate:
– 1 mug freely loaded sharp cheddar (60g).
– 1/3 mug loosely loaded pork skin panko (30g).
That's it! The yield end up having to do with 3/4 cup of breading (90g) with the complying with macros for a whole batch:.
Complete carbs – 2g.
Protein – 33g.
Fat – 31g.
416 calories.
If you do a tray of 12 pickle chips, macros per chip are:.
Total carbohydrates -.67 g.
Healthy protein – 5g.
Fat – 5g.
71 calories.

Just so you know, I lowered the volume of me biting into the improved chips by -15dB. They are wonderfully crispy.
Had me laughing pretty hard at cheese juice. Only thing that might have been funnier would be cheese blood. My wife recently saw a similar one of these for a snack that is a lined cookie sheet, pile of mozz cheese, pepperoni slice, little more mozz, and then bake in the oven. Crispy and delicious dunked in some Rao’s. Thanks for posting.
Your keto recipes just keep getting better. I’ve been keto for 5 years this month. Lost 45 lbs the first 6 months and never gained it back. At 72 I feel as good as I did at 52 when I completed a marathon. Got fat after that and could not lose the weight until I found ketogenic life style. Your recipes have helped me to stay on track.
Can’t thank you enough, and many others on YouTube, for all the great information.
I do the same thing in a sauté pan. It’s called a Frico (without potatoes). I usually eat them when my kids order pizza. Easy & gets the job done.
The cheese juice thing had me laughing too! lol
I’ve been breading chicken in a seasoned pork panko mix for a while now but it never really occurred to me to also add some cheddar cheese into it. I’ve been really enjoying the pork panko version but I’ll definitely try your breading version next. I bet graded parmesan cheese would be excellent too and it is already grated nice and small from the store (unless you buy a block of parmesan cheese).
I’ve been using this type of breading for a bit now and as much as I love the cheddar; my favorite is using real Parmesan cheese and pork rind breading on chicken tenders….so good!
Hey Steve, looks very tasty as usual. Can’t wait to try this. I love the crunch! Love your creative experimenting mind. I’ve been using the pork panko with Parmesan & various spices for quite some time now. I find my breading stays on better if I do a dry dip of either egg white powder or buttermilk milk powder first followed by the egg wash then the breading. Glad to see your channel growing 🤩
I’ve only tried whey protein isolate powder and found that didn’t adhere especially well to the chicken.
Awesome crunch. I have always used a combination of crushed pork rinds and parmesan cheese. I add seasonings to it and use it for mozzarella sticks, breaded mushrooms, fish, or pretty much anything I would fry in my air fryer. I will be trying this version using some pepper jack cheese and a bacon habanero gouda. Woohoo!
That might have been the super bowl snack video from Food Wishes? https://www.youtube.com/watch?v=-C5rVozbVeA&ab_channel=FoodWishes
It is what I use. Kraft brand works just as well as fresh grated stuff too! Lemon and herb seasoning and you got yourself a good breading.
I made tuna patties, did a quick fry so they would hold their shape, then dipped in egg and the panko cheese mix to air fry. Very crisp and good. Thank you! I will be using this often.
Sounds great!
I used this breading on chicken tenders tonight and fried them in oil — it was fantastic! Definitely going to be a go-to breading going forward. I don’t know what I did wrong with the pickles but the the breading kinda sunk under the pickle slice. Instead Of a pickle chip I had a pickle pillow. It was still tasty though!
Love this idea. As a side note, I read that filling empty cupcake wells with water when you bake helps to prevent warping.
Good tip!
Steve, I did a “take-off” on your pickle recipe! One of the things I miss on Keto, is fried chicken, so I used your pickle coating on some chicken tenders tonight, fried them up in some olive oil…fabulous!!! Really nice and crispy and the coating adhered to the chicken…maybe because of the cheese, so a big “thank you” for all you do…..
Hey Steve. Tip. When using heavy crumbs I use avocado mayonnaise instead of eggs or you can use mayonnaise of choice. I season the mayonnaise . I brush it on then press my crumb or panko recipe into it. Works perfectly. Cheers, Debbie
You can make pepperoni/cheese chaffles 💕
Yeah! I’m 74 and been keto for 6 months. Doing great. Added yoga to my daily routine and am looking and feeling better than ever…if only my arthritic hands & knees would improve more. LOL
I just found this channel so looking forward to more recipes!
Yup…it helps distribute the heat more evenly
I do something similar. My non-keto hubs likes it without knowing there is no bread crumbs in there. The air fryer helps a lot as well to crisp up the “breading”.
Ditto. 50 lbs in last year. 69 years old. Keto was the key.
Have been using this ‘breading’ a lot, most recently for my cream cheese stuffed salmon patties. Canned Alaskan salmon, drained, mixed with egg, spices and a little of the ‘breading’ mix. For the filling, I used 2 parts cream cheese and one part greek yogurt (to fit my macros better), made into a ball, then flattened a little, wrapped the salmon patty mixture around it, forming a neat patty, then dredged it in the breading mix, pushing it in all around, then air fryer 395 for 10 minutes (i used parchment, so I turned them over half way through)… oh so good. Thanks!
Thank you so much 💓 I’ve struggled with pork rinds because of the smell. But I have to say this combination of cheddar and rinds is absolutely the bomb on chicken tenders. I have a super picky daughter who devoured these tonight. I used blue cheese dip and it was finger licking good.
That makes me happy to read. 😊
I made these exactly as you did the first time and loved them. Perfect lunchtime snack. Today I made them and added crushed bacon to the breading and used both sliced pickles and sliced pickled jalapenos. Amazingly delish!
Yum
6 weeks into keto – chicken tender MANIAC here – I bread about 30 tendies at a time using this recipe but had to augment the ratio to make the batter stick to the chicken better. 1/2 cup cheddar to 3/4 cup pork rind crumbs works PERFECT for me. 1 cup of cheese to 1/4 cup pork rind crumbs was falling off like crazy. (Granted, I make this ratio 4 times since im doing 4 packages of chicken tenders at a time, generally takes 90 mins after trimming a lil better, breading, and cleanup included in that time estimate.) This sticks well and gives it that perfect crunch still.
Consider adding 1/2 tsp of black pepper/ground peppercorns, 1/2 tsp oregano, 1/2 tsp sweet basil or 1 tablespoon of Italian seasoning if you want that “Italian” touch of flavoring to your breaded tendies. 12 mins on one side, flip, another 6 minutes, good to go in my much smaller standard size air fryer!
Thank you for the tip!
@Marilyn Clute
Those are associated with inflammation which is associated with excess consumption of sugar and starchy carbs. You’re on the right track.
Great idea… I love Chicken Tenders, homemade.
Thank you!
On keto one month and down 8 pounds. Everyone says my face looks thinner. I’m prettier 😆 Not as puffy. I’m 67. Drink water!
I didn’t measure my shredded Queso cheese/pankow ratio, but I just made an awesome taco shell using this basic recipe. Heat up a small non-stick skillet. Put down a layer of this mix. While frying add a bit of extra cheese on top. Taco shell is done when the bottom is brown and crispy and the cheese top is melted. Remove, add fillings, fold and eat. For a tostada, flip while frying, so both sides are crunchy and brown. This works much better than just frying cheese as I’ve done in the past.
Yum
Have a look for Guga Foods. He did a video where he cooked steak in cheese oil. Awesome!
I just watched this, run to the kitchen and made a couple of tenders using the exact recipe. It was my first time using the air fryer and first time making something breaded. The tenders didn’t come out great. They came out PERFECT. Thank you so much. I encourage everyone watching this to go try it. You won’t regret it.
You had me nervous there for a second. 😆
TY for posting this 🙏💗
I’m with you on the smell. I have to let them air out before eating them.
W♥️W! Great idea! TY 😋
Bacon habanero gouda? Holy cow! I will now be on the lookout! Do you happen to know who makes it or where you found it? Thank you!
@Jerri Tanner I didn’t know you could do that. I threw mine away because they smelled and it just grossed me out. I’ll give it another try. Are there better brands of pork rinds?
Thanks, seems so obvious… Why didn’t I think of it
Grated Parmesan has anti-caking agents in it… Which are all carbs. It’s essentially flour… Just food process your own
@GSmothers this is probably the wrong channel for you then
@Serious Keto i fully disagree. I love all of your videos. I just haven’t been able to take part in the recipes. It’s normal for me, but I am determined to stay keto no matter what, and your vids have been very helpful. No need to go full shut down bc I found it funny that another keto recipe contains cheese and/or pork.
Sounds nice!!
Yes! We just tried parm and pork rinds for the first time last month and I’m ashamed to say we’ve made it four or five times since then. It is so delicious. I even like to soak my tenders in franks wing sauce then bread and fry them….so. dang. good.
I need the full chip biting experience. It won’t recreate the fidelity, but +15dB it is. lol
@Serious Keto The buttermilk powder is especially wonderful for chicken, imho~ a nod to traditional buttermilk marinade for classic fried chicken. The idea of pairing different cheeses, and/or pork rind flavors w/various proteins has made for a whole new world to explore~ especially in using the air fryer.
I swear I mean no harm…..but could you share what your blood work is like on keto?
@Nubiaska X That has nothing to do with this video. There are other keto channels to look at if that’s the sort of information you are after.
Seriously yum!
I use mayo to coat my chicken before the pork skins. It’s wonderful!
Just made cheddar cheese taco shells for tonight, but I need to try this next time. 👍🏽😉
going to use the crumb with parmesan, and mayo coating on non-breaded schnitzel. I also think we are going to roll swiss cheese and asparagus spears.
