This super easy Green Detox Soup is a delicious way to enjoy some comfort food while loaded up your body with lots of nutrient density. This recipe boosts the bodies immunity and supports health, cleansing, detoxing and/or weight loss.

GREEN DETOX SOUP RECIPE
1 tablespoon of coconut oil
1 chopped onion
2 medium zucchini, chopped
1 small bunch of kale, stemmed and chopped
4 cups broccoli florets
4 cups low sodium veggie broth
2 cup filtered water
1 head of garlic, peeled and roughly chopped
1 teaspoon grated ginger
1/2 bunch parsley
1/2 bunch cilantro
Kosher salt to taste
Melt coconut oil in a large pot over a medium heat. Add in onion with a pinch of salt and cook until the onion is translucent and fragrant (about 5 minutes).
Add in zucchini, kale, broccoli, veggie broth and water. Make sure that there is enough liquid to come about 1 inch over the veggies. Bring everything to a boil and then reduce down to a simmer and cook for ten minutes or until the broccoli is tender.
Turn off the heat and toss in the garlic and ginger. Pop on a lid and let the soup sit until it is cool enough to handle.
Working in batches, add the soup to a blender along with a small handful of the parsley, cilantro and little pinch of salt in each batch. Blend until creamy. Transfer the soup into a storage container or into a pot and repeat until you have blended all the soup.
*This soup will last up to 5 days stored in an airtight container in your fridge (I like to use mason jars).
*Option: I love to serve this soup with a swirl of coconut milk over the top.

I’ve done this soup with just courgette (zucchini). I’ll definitely be trying it with the additional greens!
Yum yum yum! Love blended “cream” soups! I haven’t really been into salads (ever!) so soups like this are the best way for me to get in those greens. Love the super green colour of this one! 🙂
I also love how easily sippable blended soups are! Chunky chowders have their place, but I love the ease of a blended soup. 🙂

It looks delicious. I’m going to give it a try. Danni, I’m finding I can cook without oil these days. When I need to saute I just use water or broth and it works perfectly!!
For anyone following a #lowFODMAP diet, I adapted this recipe. I used leek greens instead of onion and garlic, only used broccoli florets (not the stems), and used low FODMAP homemade broth. Also added half a jalapeño and some other spices for some kick! Thanks Dani!!

I love this recipe, thank you. Have you tried it in a sauteed form instead of making it into a soup? With less stock of course. Seems like it would make a great dish with a good marinated tofu.

@Diana Coronado i make soup all the time so i use a pot like Le Creuset, not sure what it is, so old. I also use another pot stainless steel and at times I use the Instant Pot. How about you?
@Terri Chalnick Ohhh thank you for your answers, I’m thinking if I should get a Le Creuset Pot, by now I just use stainless steel pots & I’m wondering if it worth to invest in a Le Creuset pots, I don’t know if they will bring any benefit when it comes about flavor vs stainless steel pot.
